- Long-grain rice boiled in rosemary olive oil with diced oregano and turmeric
- Homemade hummus and tahina with garlic
- Soy-based fake-meat sausage stuff from Whole Foods (I've been a strict vegetarian for 11 shocking years)
Served in two whole-grain tortillas with homemade hot sauce (habanero, red & green habaneros, apple cider vinegar, onions), a dash of Mrs. Renfro's raspberry chipotle salsa, sliced fresh avocado, and a garnish of crumbled goat cheese.
It was pretty good
For today, I made a Korean-style rice-based pancake batter, then added a kimchi-based "salsa" with green jalapenos, sriracha, and some Bragg's aminos, and fried up about a dozen pancakes. My boss' mom is Korean, and she's back in town, so I made these so she could serve them with bibimbab (Korean bbq steak)... don't know what I'll do with the remaining portion yet.
I had brunch after church with Mom at a local eatery and had 3 slices of cinnamon roll french toast. I couldn't finish the rest, so I took the remaining 3 slices home, which I'll most likely have later today.
