Oh, change of plans. Our deli meats can keep; the beef, turkey and pork are for sandwiches. So I really need to do something with the ham. I'll make a savory bread pudding with thyme and sage. There's an unfinished can of evaporated milk I can use instead of whipping cream. Leftover portobello mushrooms and spinach need to be used up. Also a couple of Asian pears. It'll make a quick re-heatable breakfast too, so I don't have to worry about that tomorrow morning.
From our local Chinese take-out place, I'll have a boneless spare rib combination plate, (with pork fried rice & egg roll). DH will have the shredded pork in garlic sauce combination plate. We buy the lunch specials and just heat them for dinner, (smaller portions, but less expensive than the dinners), and add one side order of fried scallops, (12 huge ones for $3.50). We never finish our "lunches" and with the addition of 6 large scallops each, we get two meals out of each lunch. So for about $15 total, we'll have Chinese food for dinner both tonight & tomorrow night. Not at all healthy, but sure beats cooking!
Tonights dinner will be chili, black beans, onions and cheese over spaghetti. Of course we will have some garlic toast to go along with it!
