Ham, potato and cheese casserole tonight, along with some beautiful roasted beets I found, along with with their greens, which I sauteed with olive oil, sliced the beets and served them over the greens, balsamic vinegar reduction drizzled over, so yummy!

Sir, you are a brat! JK. We're having off and on snow storms with very high wind conditions--it is cold and pretty much miserable. My daughter lives in CA still and they are always teasing me about how bad their weather is....
But this is beautiful here a lot of the time so I'll stick with it here.
Dinner out was excellent--Mexican.

We BBQ'd outside on this lovely day, too. Burgers and skewered veggies. Yum!

I'm jealous! We got 6" of snow today! And a coastal storm coming on Tuesday! No grilling for us any time soon!

Default The Agenda: January 9 - 15

This week's dinner selections will include some homemade chicken and dumplings direct from my crockpot. Other things for later include tacos (rice and beans), turkey tetrazzini, and hamburger steaks with mushroom gravy.

Have a wonderful week, and bon appetit!

I'm probably not cooking tonight but if I do - it will be something very quick and easy like pasta or something. I hope everyone has a good day!

Carnitas.

Slow Cooker Carnitas Recipe - Allrecipes.com

I rubbed the roast with spices last night and put it in the crock this morning. The meat comes out very tender and good. I pull it apart and bake it a bit afterward to dry it out, so it has some crispy edges.

Served with Mexican rice, tortillas, and a green salad.

We grilled hamburgers last night, and tonight will be something simple using ground beef - hamburger helper type thing. (DH loves that! LOL I am so glad, too!)
