I would love to make a homemade chicken pot pie! Can you share your recipe? Pretty please?
I'm almost embarrassed to tell you the easy way I make mine.
(2) refrigerated pie crusts
cooked chicken, diced
Approx. 12 oz frozen mixed veggies, steamed (I usually combine whatever leftover veggies I have from different bags in the freezer.)
(2) 10-1/2 oz. cans cream of chicken soup
(1)10-1/2 can milk
herbs & spices to taste
Take out refrigerated pie crust and let sit on the counter until room temp or per package directions. Preheat oven to 350. Line a pie pan with 1 pie crust and cook the pie crust per pkg directions for a 2 crust pie. (I use a glass Pyrex pie pan.) Combine milk, chicken, herbs, spices and steamed vegetables in a pot. When warm, add to the cooked pie crust.
Unroll the 2nd pie crust and place it on top of your dish. Using a fork, push sides down into the dish.
Bake in the oven until golden brown.
(I have also made this with just one pie crust and have omitted the bottom crust. It's just as delicious and less calories, but the plate presentation is a bit less neat since there is nothing to hold the filling in.)
