Its only 8:30 am here and already my plans for Chicken Stir Fry have been squashed! This is one of DH's favorites but everytime I plan to make it something changes! He just texted me and said that a friend of his is stopping by, but had dinner plans so he won't be eating with us ...but he'll be here just about when DH gets home from work leaving probably around 7:30 - very inconvenient - so DH suggests we "fend for ourselves" so that we don't have to worry about timing.

My cooking for today will be making egg salad for tomorrows lunch.

Grilled chicken on greens with vinaigrette dressing and avocado slices. English toasting bread on the side.

Everything is leftover from last night: fried chicken, mashed potatoes and gravy, and creamed spinach.

It's just as good without peppers. Just use something else like green beans or broccoli.

When everything in the woks are done I combine them and serve over the rice with Asian Basil and cilantro on the side to sprinkle on.

I have eaten in many Thai places and I have never yet has a dish that's as good as this one. That's about 20 servings and I sometimes freeze about half for weeks down the road. Sometimes it's all eaten before I get a chance to freeze it. When I still had kids at home their friends would somehow know I was making that dish and they would all come around for some. It's just awesome and right now I'm totally stuffed.
I'm definitely saving this recipe. I'll try the food processor to help w/chopping. I'm trying it within the next week.

I did make this Deep South Dish: Featured Reader Recipe - Braun Bon Brown Good Smothered Potatoes
last night with a few modifications. I added some coarsely chopped onion and bell pepper, leftover broiled chicken breast chopped, some shredded cheddar in the middle and on top layer. Also placed in a large pyrex and baked in the oven. DH loved it and took the leftovers to work for himself and a co-worker! No leftovers for tonight now! I've got to think of something to make for tonight.

Y'all keep the ideas coming, please!

One thing I forgot is I add a couple of tablespoons of sugar to the sauce. I used to use pineapple juice which I like but my wife doesn't.

Got a pot of gravy (sauce) cooking with some hot italian sausage that will be served with some ziti and a salad. Would of made garlic bread but we have been eating way too much bread lately so will just skip it.
