I'm going to make beef stroganoff but instead of having it over noodles I'm feeling more like having over mashed potatoes. I know, weird but that sounds good to me tonight and DH is a potatoe man anyhow so he'll be fine with that. For a veggie I have some carrots to use up so maybe some julienne sweet carrots or maybe roasted carrots.
My own version of "sweet and sour chicken" with peaches & apricots, (it's not typical Asian style, like most probably picture), with mashed potatoes and peas.
(I just bread chicken cutlets, cover them with generous spoons of Dai Day duck sauce and bake. When they're "done", I broil for a minute or two just until the duck sauce browns a bit. When serving, I add either a combination of sliced peaches, apricots and a touch of parsley for color, or cherries, red bell pepper pieces and parsley to the top.)
Baked chicken, rice w/gravy, and mixed veggies. Very tasty.
