Roast pork loin, roasted veggies such as asparagus, carrots, red peppers, zucchini, red onions...yummmm and rice. I can't wait for it to be done, the aroma is wonderful!

Tonight: Stouffer's stuffed peppers, leftover scalloped potatoes, French bread rolls.


Dessert: A big bowl of Blue Bell vanilla/chocolate chip ice cream.

Can't believe all the ambition out there the day after Easter....I have none...Lizzy toasted tuna melts on English muffins in the oven, mine with red onion, hers without...watermelon later with...we'll see

I just went for a walk and capped off my leftovers with a 44 0Z Fountain Coke and a giant size Three Musketeers, and then a Giant size Almond Snickers. I didn't get any chocolate eggs or bunnies so I made up for it as part of dinner tonight.

Made a quick casserole with chicken, rice, soup, peas, cheese and bread crumbs. Add a green salad and a whole wheat roll and dinner is ready.
