Try this - I swear by it!

Line a cookie or baking sheet with tinfoil. Spray w/ Pam or what ever. Marinate the chicken breasts in what ever you like (I prefer low sodium Dale's and some lemon pepper). Place on baking sheet. Turn oven on HI Broil and put rack about 6 inches or so from top broiler. Broil for about 6 -9 minutes on one side (you can tell by looking when to turn over) turn over and broil another 5-6 minutes or as needed. These are so tender and juicy - even heated in the microwave the next day. Also clean up is great - just throw the foil away!


Dinner tonight is hotdogs and chili, baked beans w/ bacon, tater tots.

Oven fried chicken thighs coated with Ritz cracker and Parmesan cheese crust. Pan grilled asparagus and pasta with hot Italian sausage mater gravy.

Canned Jurel mackerel pieces sauteed in butter, with a little sauce from mayo/mustard/cayenne/lemon. Patties made from leftover mashed potatoes, topped with sour cream. Fresh green snap beans, cooked with bacon and garlic. Excellent, and less (by quite a bit) than a dollar a serving.
