Ah, you were so kind as to help me with pina coladas, I can help you with that. Behold - beef stroganoff without canned cream of mushroom soup.

It does call for a can of mushrooms for some reason instead of fresh, but I would just substitute fresh mushrooms.

My sister did not bring me cream of coconut but some sort of pina colada juice infusion. So no pina coladas the other day. I managed to track down the elusive cream of coconut yesterday but after fighting through crowds made even stupider than usual by the heat, I had no energy left to make the drink. So later today I hope to have a pina colada.

Yesterday's dinner was a new-to-me recipe, I picked up from I-don't-know-where.

Pesto Ravioli with Chicken

1 pound chicken strips for stir fry
3/4 cup chicken broth
1 9 oz refrigerated package cheese-filled ravioli
3 small zucchini cut into thin slices
1 large red bell pepper cut into thin rings
1/4 cup basil pesto
grated Parmesan for topping if desired

Stir fry the chicken in a large skillet in a bit of oil, then remove. Add broth and ravioli, heat to boiling, then reduce, cover and simmer about 4 minutes, stirring occasionally. Dump in the zucchini, pepper and chicken, and cook about 5 minutes, until zucchini is tender and chicken is no longer pink.

Toss with pesto, sprinkle with cheese and you're done.

However, I would make the recipe a bit differently next time. The zucchini in the recipe seemed too much and I used only 2 zucchinis. I am sure other vegetables like broccoli could also be used. And the zucchini did not want to cook in the time allowed. In the future I would cook the ravioli in a pot of boiling water separately, skipping the broth, stir fry the vegetables with the chicken and mix the drained ravioli together with everything else separately. It's easier to control how much crunch the vegetables have without over-cooking the ravioli, which is what I ended up doing.

I also see no reason why other types of pesto couldn't be used in place of the basil pesto.

Tonight dinner is beef stroganoff.

Leftovers are a possibility not sure though.

Also i'd like to add that I wish I had the ability to grill cooking on the hot stove in the summer is not fun.

I have one grilled chicken breast left, so sandwiches ---

slice french bread lengthwise

mayo
fresh basil leaves
chopped spicy giardinera veggies (spelling?)
sliced chicken
cucumbers
lettuce

Squeeze together, slice and serve.
