Wokin' again! Stir-Fry Beef w/Pea Pods, Bean Sprouts, Rice Stick Noodles, garlic, ginger, chili paste, bamboo shoots.

Of the 20+ Chinese stir-fries I've done the 5 weeks, this was a true winner! First time cooking with Rice-Stick Noodles!

One benefit to all this Chinese cooking: I've losing weight! Hooray!

More wokin' tomorrow!

Leftover beef tips and sides. I changed the sides to mashed potatoes, mac & cheese, butterbeans, corn w/ peppers and a salad. I won't have to cook for a day or so!

pina coladas and a taco salad dip that is sort of like this: Taco Dip I Recipe - Allrecipes.com

Except I do not use iceberg lettuce, I use a mesclun mixture. I don't use low fat sour cream or cream cheese. I add grape tomatos and chopped green onions and not a green pepper. I have also made it with refried beans but prefer it without them.

Nice for a hot, humid day.

im going to make an effort to eat things that have been sitting in our freezer too long. i also have a lot of pasta sitting around that i want to put away. my wife made me buy a big bag of costco frozen meatballs a while back and has barely eaten any. so i made some penne last night and ill be having penne with 5 meatballs. gonna try to do it without any sauce since i dont have any sauce at the moment.

i may be eating penne with meatballs for quite a few dinners to come.
