Drain and keep in colander while you sweat the vegetables in your dutch oven or other soup pot.
In a bit of oil, put your cut up vegetables over medium heat - onion, celery, green and yellow bell pepper, and jalapeno. ( I used 1/2 onion, 3 stalks celery, 1 green bell, 1 yellow bell). I also added my dry seasonings at this point - epazote (to help with that embarassing bean problem), mexican oregano, and some san antonio chili powder.
Add your beans and water to cover all by a couple inches. Drop in a meaty beef rib/ham hock/smoked sausage/a few pieces of chopped bacon. Bring to a boil and then lower heat to keep at simmer, partially cover pot.
My rib became so tender by the time the beans were done, that everything slipped right off the bone! Next time I'm going to use bacon AND a rib or two. The beans have a nice meaty flavor although there isn't much meat in there.
Got back from spending 2 weeks in MO last night, making something really easy today, the house is a train wreck!
Made baked ziti and salad in between 8 loads of laundry.
