I like and use anything but:
curry
cilantro - tastes like soap
star anise
cloves-gives me a headache
hot pepper sauce, except a tiny bit in chili
But then you said spices. Not herbs or condiments. Good thing you didn't say condiments. My fav list is very long and not always the typical things thought as condiments.
If you like curry you MUST try this cheese ball over the holidays... It's my new favorite.
8 oz cream cheese
1 teas. curry powder
1 teas. dry mustard
9 oz jar Major Grey chutney
1 c. grated coconut
Mix cheese, spices and 1/2 jar of chutney. Form into a ball and wrap in plastic wrap (Place the wrap in a small bowl, put the cheese in, then gather up the wrap and twist it into a ball) and chill. Sometimes, I make 2 smaller ones instead of 1 big one.To serve: Place the coconut on a dish, put the cheese ball on top of the coconut and drizzle the remaining chutney over it. Serve with bland crackers.
^ Shallots are very similar to onions, I bet if you didnt tell the old folks, they wouldnt know.....
Do you mean lamb masala, that would make more sense than Marsala wine sauce.

I just inventoried my spices and discovered that I have about 50 different ones. That got me to thinking which ones I use a lot of (like curry or chili powder) and which I just enjoy as unique (like herbs de provence on fish, or cardamom in coffee).
If you had to only have ten spices, what would they be and why?
I like to cook Moroccan and Indian dishes, and I make curry using individual spices, not curry powder, so my "have to have" list is quite long.
