My Grandmother used to make what you posted, always had a really hard time finding the cheese, and she lived in a German neighborhood of St Louis.
I have had success with cream cheese, but it doesnt taste like hers did, until I found what I posted, it really does work.

I love German potato salad, the recipe I had (but sadly have now lost) came from a cookbook my German teacher got when she lived there. It was vinegar-based, no mayo, with bacon and unless I am really going crazy this version also had green beans. My mouth is watering just thinking of it, and it was always a huge hit at pot lucks. Maybe someone will recognize it and post the recipe.
Mom and G-Ma always made kooga(how it sounds sp is WAY off) Maybe it's coulga? I thought that is what they called it, had blueberrys most often. More of a flat pan bread.
German streusel coffee cake was pretty good, too.
Beer rocks are awsome and pretty easy to make.
There is also a thick noodle mix w/potatoes and onions that I also remember.
