Also does the quality of the beer matter. I have a couple olde english 40 ozs and I'm wondering if they would work good for this recipe.
I find a beer with a more "Malty" taste is the best and yes your beer is that kind. Beer/pancake batter is the closest I've ever gotten to a fish and chip store. The beer makes it a light bubbly batter.
Mnay restaurants use cornmill flour which is less gritty than corn mill.I personally use a deep fryer and peanut oil. Depending on the fish thickness as to temperature .I prefer cajun seasoning myself really.
Growing up, my parents used cornmeal to batter fish. No flour. Cornmeal, salt and pepper. Totally different fried fish experience.
That's the only thing my family has ever used. Dip in an egg, milk mixture, with salt and pepper, roll in the corn meal and drop it in the hot oil. I've watched people fillet fish but, if they're not super big, I fry them whole. You know you cooked it right when you can pull the skeleton right out of the meat. mmm mmm good!
It may be helpful to note that the tempura dish of battered cod cubes has absolutely nothing to do with pan fried, corn meal dredged fillets. They are both great dishes and I have both often but they have about as much in common as a rib eye and a roast.

Tempura cod filets are also unlike the beer batter cod filets as the breading is a lot thinner.

You are right there is a difference between beer battered cod and tempura cod, but it isn't much difference. A couple of extra ounces of beer and you have tempura-lite.
