Default Need some ideas

Hi everyone! I have been asked to make dinner for my daughters cheerleading squad (HS) next week before one of their games. There are 16 girls. Dinners that have been made already include salads, spaghetti and meatballs, pizza, subs, etc. I was thinking about making ham and cheese pinwheels and maybe a tossed salad or something along those lines. But I really wanted to try to come up with something fun and different. It needs to be easy for them to eat as well as to transport - and I'm not sure I should bring something hot as it could be sitting there for a while before they can eat. Plus - many of them may not be ready for a true dinner since it will be around 4:30 when they eat.

If anyone has any other suggestions I'd love to hear them. Thank you!

Nic, I had to do that yrs. ago for our dd's school, I picked up the small, soft rolls at Sam's Club and made mini ham/cheese, turkey/cheese sandwiches, with side potato salad, pickles, condiments & chips. Easy and they all went.

Fruity Fun Skewers Recipe - Allrecipes.com

This is always nice to have some fruit...because you don't want to eat too much before the game, and having to do the stunts. I liked fruit, milk, and a really yummy pb&j...don't forget the cookies!

Cheerleading is one of the most difficult high school sports and the girls really eat a lot but they are also a little sensitive about it. So I say let them graze. Offer plates of food from which they can choose light or heavier choices. I like a hearty homemade soup and then as someone suggested above an array of sandwiches. Understand that you are going to need 16 sandwiches of different types cut into quarters and stacked on a tray or trays. So a girl can have an selection of sandwich quarters. She can choose ham and cheese on rye then come back and get a watercress and cream cheese on thin white bread, etc. etc.

I think a vegetarian soup and at least a third vegetarian sandwiches is good and offer both healthy and not so healthy sides like chip, carrot sticks, pickles, etc.

And remember what the girls eat is none of our business. God knows they have enough stress as it is.

Antipasta on skewers is good for grazing, transports well, and can stay at room temperature. Cubed salami, pepperoni, olives, provolone, cherry tomatoes, tortellini (even stuffed raviolis). Look at any antipasto platter and figure out what you can adapt to put on a kabob. Then do a nice homemade dressing. I can think of all sorts of blanched vegetables: asparagus, cauliflower, mushrooms... A couple of kabobs with a little cured meat and cheeses, and it's a cool walk-around-able kind of meal, and you can go as budget conscious or as fancy as you like.

It's good looking too, really colorful. They can pick at whatever they wish to eat and even if they don't eat everything it doesn't really seem so wasteful.

Funny because one of the girls actually asked me for PB & J! Thanks so much - and its true - I don't want to make them anything heavy.
