My father-in-law has about 80 hens which run around in a chicken-wire yard (it's for their own protection from the owls, hawks,dogs,coyotes and foxes). There's nothing like fresh eggs. In addition to kitchen scraps and feed the chickens get bugs and worms they scratch up.A few handy hints:
1. fresher eggs can be harder to peel when boiled. Set a few eggs aside for a week, then boil and they will peel easier
2. Clear spots or streaks on the egg shells usually mean the eggs are a few weeks old.
3. Egg whites should have 2 distinct layers-a runnier outer layer and a stiffer inner layer. The firmer the white, the fresher the egg.

Free range eggs means that the chickens are let out of their cages for a minimum of one hour a day, hopefully longer for their sake.
I buy Egglands cage free organic with extra omega's. Cage free means they are free roaming. And with them being organic they're not given any hormones or fed anything synthetic.
Personally I think they taste better. It's like with beef, if you feed a cow hay it's whole life you'll get one flavor of meat, and if you feed it corn you'll get another. Same way with chickens, they are what they eat.
A buddy of mine has hens and raises a hog from time to time, I'll tell you the truth, cook some fresh sausage and then cook the egg's in the grease and your in heaven and I mean like dead, you can feel your heart slow down but it sure is good.
Oh! how can I forget! When I was about 7 years old,I stayed with my uncle's family during the summer,he had a coop of hens,every morning I would have an egg that was still warm and fresh,then I quickly ran to my aunt so that she could make me a scrambled or sunny side up egg for breakfast,that was fun!
I must be getting old to forget that!
