What no Tamales on the list or Mole Pollo ... but one at the top of my list is Sopa Azteca with feta cheese and avocado slices.

Tamales are great too, when made correctly.
When I make it at home I prefer enchilada casserole. The one where you brown hamburger and add hot crushed red chili powder(mexican kind) some flour and water and thicken then mix with a bag of crushed corn tortilla chips and top with cheese. I learned this from my mexican friends in Cheyenne. It's the best comfort food topped with a little sour cream and fresh salsa, YUM!!

Homemade tamales, especially stuffed with carnitas. Yum!
I also like chicken or steak quesadillas with sour cream on the side.

Many years ago in Torrance CA my sister and I used to go to this dinky hole-in-the-wall type family owned place (often the best kind!) and that is where I had my first taquitos. I have never had any like it since. I'd love to find a good place for taquitos.
I also love carnitas!

I don't know where you live now, but my experience indicates you can't find good ones outside of southern california. 17 more looooong days...

Tamales and fajitas.
At a certain someones restaurant/pub, which is a combination of Irish and Mexican cuisine, corned beef nachos are a HUGE hit.

Might that have been La Capilla in Old Torrance? Where exactly was this hole in the wall? Taquitos are one of my faves so I would love to try these (I work in Torrance).
