Chimichanga
I make them every couple months or so. And whenever we go out for Mexican, they always lure me, though I also like rellenos quite a bit.
But are chimichangas really Mexican, or Tex-Mex?
Some say Mexican, some not.
Either way I like them the best.

Carnitas , food of the gods when done properly. I also love game with Mole sauce. Yummy ! 
Otherwise, fajitas with fish and king prawns or a good chicken chimichanga.

I love all Mexican food but some of my favorites are, Enchiladas de Mole, Enchiladas Verde and one of our local mexican restaurants makes a dish calles Pescado a la Veracruzana (Red Snapper with onions, garlic, tomatoes, peppers, olives and capers), VERY GOOD.

I've never had rellenos but have always wanted to try them. I love jalapeno poppers though, any similarity?
I used to get these seafood enchiladas at a place called Senor Max's in So Dakota and it had this newburg sauce. Yuuuummmm!!

San Diego-style shredded beef crispy tacos and rolled tacos with guacamole, cheese, lettuce and hot sauce.
I get to eat those in 21 days, I'm unreasonably excited!
