It's a wonderful source and tastes great (I use Jiff's Reduced Fat and the sweetness is just right for me). And I don't know what its shelf life is (unopened) but it's also considered an excellent "surival food".
For what it's worth, most reduced fat peanut butters are so altered in ingredients that they aren't actually legally able to be classified as peanut butter anymore. Shouldn't have to, as there's already oil present in the peanuts.
I used walnut oil for a smoother consistency but it is perishable, needs to be refrigerated and used up, you do need a food processor.
You do not need to add sugar or salt and the amount of oil you use is purely on your prefrence of consistency. (You should use a little oil)
Go to a health food store ~~ they have peanut butter making machines right there. You can make it fresh...
