What I like to call 'potato boats'

Where you cook the potato, then chop the potato in half, take the potato out of the skin, put it in a bowl, mix with butter/cheese/Philadelphia/Mayonnaise, put back into potato skins, cook for a further 15 minutes.. and enjoy!

Gosh, I haven't been able to get back here in a couple of days! Tonight's dinner is baked enchiladas and a skillet of spanish rice.

Bottom round roast, potatos and baby carrots cooked together in a Rival roaster oven, and served with beef-onion gravy and hot buttermilk biscuits.
There will be seven of us for dinner tonight... pull up that eighth chair and join us!
