I am doing corn beef in a boiled dinner with pickled beets. I am looking forward to it. Will cook the meat long and low.....so it doesnt tough'n up.

Dinner tonight is ribeyes on the grill, corn on the cob, baked potatoes, caesar salad and yeast rolls. Sweet iced tea to drink and strawberry shortcake for dessert.

I am flying solo this year while my wife is out of town. Did not feel like doing a corned beef just for myself, so I am going to have some Irish bangers and mash this evening, instead.

sounds right on to me: we are going to our daughters and she is having the same but is roasting the cabbage. If you knew our last name it wouldn't be hard to figure out what we are having; NO DESSERT though, we are having appitzers instead. I will take them. We are leaving pretty soon, long garage at her house today so the night will be very early.

We are still eating cajun: shrimp etouffe and jambalaya. But Sláinte! to all!
