we are having spinich and cheese stuffed chicken breasts, squash and carrots and cottage cheese. I will probably boil a couple of potatoes for hubby.

Pinto beans cooked in ham drippings and fat/meat.
Scratch cornbread slathered in butter. Honey added later to make into the eve's dessert.


Tomorrow, it will be split pea soup made with all of the rest of the huge ham baked last eve.

If not, I'm still in luck -- we have two leftover enchiladas from last night.

Chili that my husband has had simmering in the crockpot since last evening. A night of no cooking and good eating. I love it.

Me too!

Threw together the chili last night in the crockpot and by tonight it should be pretty good. That an cornbread and a salad.
