I stopped at a Mexican market and picked up some carnitas, tortilla, Mexican rice, a lime, and some cilantro. I'm going to dice up a little onion and serve with hot salsa. On the side will be a avocado and tomato salad.

I have a couple of huge chicken breasts in the crockpot now. I have no plans for them but maybe I'll shred them and make enchiladas. Maybe. I'll figure it out once I get through my day.
