I have a chicken enchilada casserole in the oven. Mmm. I feel myself getting 5lbs heavier as I type.

The fudge is a really simple recipe:

1 1/4 Cups Sugar
2/3 Cups Evaporated Milk
1/4 Cup Unsalted Butter
16 Marshmallows
1/4 tsp Salt
3/4 lb Semi-Sweet Chocolate Chips (I use Milk Chocolate)
1 tsp Vanilla Extract
1 Cup Chopped Walnuts (Optional, of course.)

Combine first 5 ingredients in a sauce pan over medium high heat. Cook, stirring constantly, until mixture has boiled for exactly 5 minutes. Remove from heat; stir in chocolate chips and vanilla until chocolate is melted. Stir in nuts. Pour into a buttered 8" pan. Let stand until firm, then cut into squares.

NOTE: I used Kraft Cinnamon Bun Mini-Marshmallows. In that case I needed to convert mini-marshmallows into regular marshmallows.

4 regular marshmallows = 1 ounce, so 16 marshmallows = 4 ounces.
1/2 cup of mini-marshmallows = 1 ounce, I needed 2 cups of the mini-marshmallows.

Roughly, that's about 4-5 mini-marshmallows per regular marshmallow and this was all probably more than anyone ever wanted to know about marshmallows! Except for the fun fact that I used to work in a factory years ago as a marshmallow chef! 6am - 6pm on my feet with only one 20 minute break. Not fun.

My husband made some home-shredded hash brown potatoes. They were certainly good.

Lazy day with shopping here...Frozen fish things (Gortons in potato crust) that were not bad, some tater rounds and steamed peas...Had to have something fresh

Coconut shrimp and rice...finally mastered not having the coconut fall off during frying...toss the coconut with a tbl spoon of flour! Yum!

Mushroom Chicken. Onions, red bell peppers, crimini mushrooms, chicken breast chunks and broccoli over brown rice.

Original Chick-Fil-A chicken sandwich, carrot and raisin salad and a small chocolate milk shake. The shake was FREE thanks to a coupon I got in the mail. Woot, woot!
