Marinating a pork roast--rosemary, thyme, onion, garlic, dijon mustard, white wine vinegar, olive oil--will either cook on grill or roast in oven. Roasted white and sweet potatoes and carrots and slaw for sides.
Too pretty to stay inside today. We went "exploring" and ate a late lunch, so we wil have the pork roast for supper tomorrow night--I promise!
I've decided to clean out my pantry and refrigerator and make the last of what I have along the lines of meat and other heavy dishes. My body just doesn't want things like that anymore. They make me feel like a lead balloon and very sluggish. So, I've been making those final meals and giving them away, keeping small tastes for myself.
Soon, I'll sticking to veggies, fruit, grains, legumes, nuts and seeds, etc., I'm not purposely trying to become a vegetarian or a vegan and I'm not saying I'll never eat meat again, but, right now, my body wants this change. It's not a decision I'm making lightly either. But, I have a feeling this will be a long term life change. It just feels that way. Have you ever been confronted with a decision to make and you just felt like it had to be made and that it was the right time for that change? That's what this feels like.
It was going to be rack of lamb - and then I thought about how tired I was, and we went to a German restaurant because it is nearby and informal. People rave about the food there, and I don't know why - I think it is pretty average. My fried potatoes are better, my red cabbage is better, my rouladen are better, etc, but what was definitely better today was me not having to cook.
We ate and ran, and I went straight to bed for a nap.
