Thinking about making mashed potatoes - DH HATES instant potatoes, but I bought a box of a name brand kind. Any one have any tried and true ideas on how to make them taste more like homemade? I really don't feel like peeling potatoes.

Dinner tonight is fried shrimp, french fries, cole slaw, crab salad and hushpuppies. Sweet iced tea to drink.

My daughter is cooking tonight.

She's making a casserole using hash brown potatoes as a shell lining the baking dish. That gets baked for 20 minutes. Then she makes a meat mixture using browned ground beef, mixed vegetables and brown gravy mix blended with water. Meat mixture is poured into prepared baking pan and baked for 20 minutes. Smells wonderful so far.

Try adding some cream cheese or sour cream into them, it really improves the texture.
