Beef stew (real hearty--thick gravy, lots of veg's and chunks of roast beef), corn bread and fruit cups.

My husband does Meatless Mondays, it's a tradition he had growing up, so dinners are vegetarian for us:

Potato and cheese piergoies sauteed with onions and green chilies. This will be served with a sour cream and chive sauce. I'll likely throw a salad together to get in a serving of veggies too.

Leftover baked ham, fried taters, onions and squash, mac & cheese, blackeyed peas w/ ham bone, creamed corn, corn bread, glazed chocolate pudding cake

Dinner tonight is a Caesar salad loaded iwth chicken chunks and a baked potato with sour cream, chives and butter. Sweet ice tea to drink.

It looks like a toss up between chicken salad on saltines or a BLT salad. I'm lazy today in this dreary weather so the nod will most likely go to the chicken. It's already cooked. Just have to open the can and stir in some mayo and chopped onion and pickle relish. Just with I knew what spice to use to give it that good deli made taste.
