this really turned out good, despite the fact that i don't know how to cook indian food, and I was reeeeally stretching for ingredients.

I cut the chicken into chunks, marinated it in yogurt and garam masala.. put them on skewers and roasted in the oven.

then made a sauce of yogurt, zuchinni, sundried tomatoes, half-and-half, garam masala, garlic, rosemary, and sriracha..

served over white rice. Sounds weird, i know, but i was happy.

My husband does Meatless Mondays, it's a tradition he had growing up, so dinners are vegetarian for us:

Potato and cheese piergoies sauteed with onions and green chilies. This will be served with a sour cream and chive sauce. I'll likely throw a salad together to get in a serving of veggies too.

It looks like a toss up between chicken salad on saltines or a BLT salad. I'm lazy today in this dreary weather so the nod will most likely go to the chicken. It's already cooked. Just have to open the can and stir in some mayo and chopped onion and pickle relish. Just with I knew what spice to use to give it that good deli made taste.
