Keeping it easy and light tonight. I am about to put on the beans for chili and I am using a package of Bear Creek chili mix for starters, but am adding a little browned sausage, beef and a few other things. I think we will top the chili with acocado and sour cream, plus sliced onions. Other than that we may not have anything except cheese bread... at least today is supposed to drop to about 95 degrees.
Tonight I am making pulled pork sandwiches with BBQ sauce on the side, cole slaw and french fries. I did a pork roast last month and I had cut it in half and froze the half we didn't eat. That's what I'm using for the meat - I stuck it in the crock pot to thaw and reheat, and have started pulling it already. It smells heavenly.
Not cooking on Tuesday - have repairmen scheduled to install new furnace and AC - house will be hot...hot...hot.
But, am looking forward to Wednesday's 4th of July menu....mwhaaaaaaaaa. Ok, here it is - and I have been drooling for days now.....Wednesday I am making Beer Brats then grilling them with onions and peppers, deviled eggs, cole slaw, pea salad, homemade mac and cheese, and homemade cherry cobbler with vanilla ice cream for dessert. Have a choice of Killian Red, Mike's Hard Lemonade, Water, Diet Coke, or Snapple Teas to drink. Yummmmm.....
