Japanese Chicken Patties. Too simple! 1 Cup leftover cooked chicken, 2 Cups mashed potatoes, 2 eggs, diced onion, salt, pepper. Mix it together, coat it, or not, w/flour or bread crumbs and fry in oil! Recipe said dip in soy sauce, but IMO, you can use whatever, even sour cream! Yummy!
I thought my cooking stopped yesterday, but that's what I get for studying more recipes in my Int'l Cookbook, and checking my inventory to see if I have the ingredients! Yup! All there!
But this came as a surprise to me, as I don't associate potatoes with Japan!
Ribeye steak, creamed spinach and buttermilk biscuits with butter. Yum!
