How long is the bacon grease good for ? Is it necessary to store it in the fridge?

I wouldn't leave it out, I would think it would get rancid really quick.
I usually keep mine in the fridge, but it's kind of like margarine in that it's not going to hurt anything if you leave it out overnight or something.
My mom used to keep hers sitting next to the stove all the time and none of us kids ever got sick from it. Of course she was always topping it off with a new batch of grease, so that might have had something to do with it.
And here I've been pouring my bacon fat down the garbage disposal!! WTH???
oh NO...NEVER NEVER do that.. the pipes are like arteries and the grease cools down it will start to form a ring and soon the pipe is clogged up but good.
I'd never buy it, I always toss mine into the woods. Not that I don't like the taste of it, it's just a health issue for me, I prefer healthier oils without nitrates.
I've been pouring it down the current garbage disposal for 19 years now, and 11 years at the previous house...
I never do it because "everyone" knows not to. But your post prompted a little googling.. I have one post in your favor (this one is funny!) and one against. The one for says he proved that doing the grease down the drain caused no problems in HIS plumbing, however the government website claims the reason not to do it is that it solidifies in your neighborhoods' shared sewer lines.
As for me, I'm going to stick to pouring my bacon grease in the trash or an old can.
