My favorite leftover is risotto. I form it into patties, dredge it in seasoned flour, and pan fry it in butter until it's crispy on both sides. Fresh-grated parm reg on top.


The lasagna mentions here remind me that I haven't made lasagna in ages. That's always better a day later.


Thanksgiving stuffing with gravy and cranberry sauce is a favorite. I make a typical Bell's with store bought bread cubes, mirpoix, butter, and chicken stock stuffing but I add a bunch of chestnuts. My cran sauce is the recipe on the bag of cranberries but substitute orange juice for water and splash in Grand Marnier at the end. I'd be totally happy without the turkey. Just nuke the stuffing/gravy and serve with leftover cranberry sauce.

I was just going to post "lasagne Bolognese," but it's true of any kind of lasagne.
