I read sometime ago that frozen are just as nutritious if not more than fresh. The canned are really bad-zero nutrition, but I like the baby peas sometimes on my pasta if I'm lazy.

But if you look at the frozen broccoli, it looks like lightly cooked, because raw broccoli would be very tough and the stem is not in any way transparent-looking.

Freezing most veggies will take the toughness and certainly the crispness out of them. The purpose of cooking them is to do exactly the same thing, so freezing provides part of the effect of cooking. For example, if you freeze mushrooms, and then thaw them, they come out almost exactly the same as if you had cooked them.
