Sautee the chicken then make a quick pan sauce: throw in a little olive oil, then some chopped shallots, then some white wine and scrape up the brown bits on the bottom (lots of flavor). Add a pat of butter and some lemon juice and chopped fresh parsley to finish.

You can make you rice pilaf style in your rice cooker. Chop some onions, shallots, garlic...whatever you have. Turn the rice cooker "on" and sautee those veggies with your favorite oil in the rice cooker. You can add some spices too. I like cumin and cinnamon (maybe even some raisins or currants). Then add the rice, toast it a bit with the veggies until it smells a little nutty/toasty and looks a little browner. Then add the water and cook as normal.
Other variations: "paella style" with tomato paste, bell peppers, onions and saffron. jambalaya style with tomatoes, tomato paste, bell peppers, onions, garlic, thyme and cayenne pepper.
Keep experimenting, and your rice will be much tastier.

I like to make an easy pan sauce with broth, whatever complimentary spices make sense and finish with a pat of butter. I rarely bother with the shallots. It is still tasty.

My most favorite thing when I have that meal is A1 sauce or Heinz 57 sauce or BBQ sauce. Just dribble some around on the rice. Wow.....I mean I really love that! I hope you do it.

I used to have hardly anything in the pantry, and I'd pretty much shop every day or so for what I felt like having. But then I got into the whole "survival mentality" and like having at least a year of food stored up.
But even before I decided to stock my bunker, I liked a TV show called Gordon Elliot's Door-Knock Dinners. He would randomly pick a person's house, and knock on the door, accompanied by a master chef. They would then take on the challenge of making the home owner a gourmet dinner out of whatever they could scrape up in the person's pantry. I guess I developed this fantasy that one day they'd knock at my door, and I wanted to have more on hand than oatmeal, a banana, and a bottle of vodka. I'm still waiting, but now I'm ready!

I like ketchup on my rice. My husband thinks it's strange but it is good. Soy sauce on rice is good too.

That reminds me of a friend I had who had anorexia--all should would eat was rice with soy sauce in precisely measured amounts. No, I need more of a "sauce."

This isn't a sauce, but you don't need it. I found this recipe in "O" magazine several years ago and it is ABSOLUTELY yummy and SO easy. You can leave out the shimp and just do the top 5 ingredients. The key ingredient is grated parmesan cheese which I believe hasn't been mentioned.
Occasionally I've found the rice doesn't fully cook OR to use leftovers just add a couple more cans of broth, some spinach, and a little diced chicken or pork chop.

I make brown rice with a chicken bouillon cube to start. When it is finished I will add a little butter and parsley.
I also like to make shrimp or cut up chicken pieces with Sweet Baby Rays Honey BBQ sauce and serve it over the brown rice. It gives it a little moisture and sweetness.
With leftover rice I will add some chopped cooked veggies like green peppers, mushrooms, celery, carrots, onions...whatever I have, mix it all up and add some Sweet baby Ray's again...and sometimes melt a piece of laughing cow cheese in the mix.
You can also make scampi sauce to serve the rice using either chicken or shrimp
