Hi everyone: Can someone help me I made Potato salad for the Labor day Holiday and forgot to put it out. If I keep it refrigerated until next Sunday for a party I am going to will the Potato salad keep that Long???? THAT WOULD BE ABOUT EIGHT OR NINE DAYS REFRIGERATED. NEVER HAD THIS PROBLEM BEFORE.
Personally I would not serve potato salad that was made a week ago. You have fresh ingredients in there like potatoes, onions, celery, etc. Once vegetables are cut, they begin to break down quickly and I think the taste will be compromised as well. I'm pretty picky about leftovers - after one or two days out they go. I'd hate to think about the possibility of my guests getting food poisoning from something I served.
Store bought potato salad will keep quite a while because there are preservatives added to it.
I have bad thoughts about keeping it for nine days. Your probably right, its a shame it's 10 lbs of potato salad. It has mayo and vinegar with celery and onions. Hate to throw it out but I may have to .
You can salvage some of it by making "potato salad casserole" though.
Just scoop some in a pyrex, maybe sprinkle it with cheddar or just paprika (or sunflower seeds would be pretty & make it more balanced) and bake it at around 350 until nice and bubbly.

Bubbyanj, I've forgotten things like that, and it just made me want to kick myself later, but week-old potato salad would definitely be questionable.
My sympathies.
But it would be awful if people got sick.
That actually happened to some people after a soccer team potluck years ago, and two of the moms even ended up in the hospital.
