HA! Great (or warped?) minds think alike, because I was going to say:

No matter what I do -- cooking, working, whatever -- I put my heart into it.

One of my current favorite dishes is a Peruvian one named anticuchos which is seasoned and braised veal heart. Anticuchos - Wikipedia, the free encyclopedia I did not know I was eating heart. Thought it was very lean (and tender) meat.

My family was raised on a farm and so they ate everything. Nothing went to waste. Bones back into the pot for stock.

I ate and enjoyed liver(sauteed with onions and green peppers in wine) as a youngster while heavily into weight training as a solid source of protein. Enjoyed tripe as a youngster, either Southern or Caribbean style in a pottage. Did not know then what it was either. Our neighbors were Jewish and so ate much chicken liver, etc. Gizzards on the BBQ are wonderful. etc.etc.

My thoughts on organs are the same as with consuming any unsual food. It is all in the sauce or seasoning. It could be dog or cat and I would not mind. I ate rodent and it was tasty. Same with organs.

Do draw the line at cow brain. Mom says I am missing a treat. She is 79years old and goes to the gym every day save Sunday for 1 hour. A dynamo and sharp brained as a fine knife.

Thanks Radical347..you just reminded me of how much I loved blood sausage as a youngster. Morcilla is Spanish version.http://en.wikipedia.org/wiki/Black_pudding Black pudding to you anglophiles.

Yep, just about any and/or every. Tripe, kidney, liver, heart, testes, penis, pancreas, throat, tongue. The only ones I won't eat are brains, intestines, and blood. (Though I used to enjoy blood before.)

My mom makes chicken livers fried in butter with onions. I tried it once, and never will again.

But if you like 'em, more power to you!
