I am too like most of the posters on this thread a big cheese fan. I cant really pick a favorite. I love feta cheese. Spinach and feta anything......salads, hamburgers, omlets, pizza. Feta goes really well with spinach and also on a "Greek" salad. A lot of Greek places make salads with black olives, onions, cherry tomatos, the gyro meat and feta along with a nice vinagarette and pita points. Yum!!

I also am a fan of dry bleu cheese. It is a stronger cheese I guess. I like it on regular house salads. On top of a steak salad. The bleu will melt on the hot steak and french fries. Dry bleu is also great on hamburgers with a slice of bacon on top.

Fresh mozzerella is also one of my faves. I usually only have it if I have some sort of tomato mozzerella salad. The mozz is usually thickly sliced with tomatos sometimes dark greens and drizzled with balsalmic vinagarette. Can beat that for a great summer lunch.

Other than those I enjoy all the normal stuff.....cheddar, jack......those two make a great blend atop cheese fries or nachos, swiss.....goes well with a hot corned beef sandwich.....colby.....I just like to eat out of the package....hot pepper cheese......thats great with pepperoni and crackers

I could go on and on. I love cheese of all types. So far the only cheese that I have discovered and not liked was brie. That stuff is disgusting.

I love a creamy, runny Brie--and its stinkier cousins.

Has anyone ever made their own fresh mozzarella?
I have a recipe someplace but have not yet tried it.
Obviously, unless somebody has special connections it would be with cow's milk rather than buffalo's.

Manchego with a glass of Amontillado

Gorgonzola with slices of pear

Feta and kalamata olives

Vermont Cheddar with crisp Granny Smith apples

Ahhhhhhhh...

I just recently became a fan of blue cheese - Saint Agur. Yes, it's French! It's so delicious, very creamy! A friend of mine works in a wine and cheese shop, so she give me a discount. Now, if she could only give me a "calorie discount" as well... *sigh*

In fact, I like most creamy cheeses, as long as they're not aged too much. I got a whiff of one that smelled like my son's dirty socks!!! No, thanks.
