Just discovered this. As Janaicans we eat a lot of steamed pumpkin. I am going to steam this baby but see some great recipes for roasting it. Anyone else a fan?
Never heard of this squash and I am squash lover. I just looked this up. It looks almost similar to sweet dumpling squash. Never had that either. But I'd love to try it.
Yes you can. Just told my GF up there about it and she went to north shore farms I think it is called and got it. Not sure if that is a farmers market.

My wife covers the squash with a sheet of tinfoil crumpled up over it. I dunno the exact reason. I think it's to hold in the heat while letting the stock cook off. She doesn't cover it with a pot lid. Just kind of semi covers its with that foil. It's delicious hot or cold.
I discovered kabocha squash at the Japanese restaurants around here - they all serve a piece of tempura kabocha with the mixed veggie tempura they make. I so loved the flavor of it that I sought out the ingredients and learned to make it. Now you can find kabocha at the local 99c stores around here.
It is even more popular now. I see it in more and more places.
