A coworker and myself are going in on half of a female cow.
What are the best cuts to get? Steak, roasts, and hamburger, is what he told me that he recommended.
What do you think?
My husband wants to also get ribs?

Why a cow?

Is the cow an old DAIRY cow?

How old is the animal?

If you are splitting half a carcass, you get a portion of all the good parts and bad parts.

Also. you are going to get bones as well as some "less tender" cuts.

LOL - first any FEMALE bovine is a cow. A male is a steer or a bull. A young cow is a heifer.

Second - the age of your cow is very important. If its an old cow, you should get 100% in ground beef. Any steaks or roasts would be as tough as shoe leather. Whether to get different parts in steaks, roast or ground is a matter of personal taste. Personally I always get everything in roasts and then I cut the steaks and do my own grinding. Roasts keep better in the freezer and gives you more options.
