Umm, the first video the OP presented is an idiot going off "fire" and how "fire cooks" and then rambles on about "char" etc... I mean, he didn't teach anything or explain any real process. It was like going to a modern art show where lots of words are being thrown around, but no real practical meaning or relevance is achieved.

The video you provided explained how the Dutch Oven process works and he very clearly and calmly explains the relevant means to achieve this cooking process through various approaches and examples with random commentary.

There are specific technical differences in the application of the heat source between grilling and BBQ. They are two different cooking processes.
