they screwed up the description of BBQ in my home state of SC, like North Carolinians are apt to do... but come to think of it they screwed up the description of their own state too... but its entertaining nonetheless.
Umm, the first video the OP presented is an idiot going off "fire" and how "fire cooks" and then rambles on about "char" etc... I mean, he didn't teach anything or explain any real process. It was like going to a modern art show where lots of words are being thrown around, but no real practical meaning or relevance is achieved.
The video you provided explained how the Dutch Oven process works and he very clearly and calmly explains the relevant means to achieve this cooking process through various approaches and examples with random commentary.
(it has fantastic google and yelp reviews by the way)
Yeah, that restaurant is pretty good. I've eaten there a couple times. Never mind if the chef might be pretentious.

Because the guy in the first video has a beard and could probably be a liberal. That alone is enough to **** off the usual gang of cluckleheads on P&C. Never mind that this should have been posted in the food forum.
Yeah, OK. I hate grilled watermelon. I just want mine raw, and cool.
