Caprese salad - thick slices of good beefy tomato, fresh mozzarella, basil leaves from the garden, drizzled with olive oil and doused with fresh cracked pepper. No cooking whatsoever and it's filling, delicious, and healthy!

My daughter was just talking about Capreese salad yesterday. She uses Buffalo mozzatello. I couldn't find it yesterday at my favorite store. She gets hers at Sams but says it is really expensive...she and hubby use it as a side dish though, not an entire meal.

here are our favorites: if it is over 100 I prefer hubby to stay inside so I use the George Forman to grill a quick steak or chicken breast: we depend on the toaster over for a lot of our meals or we have salads. Taco salad is a favorite, so is chicken salad. Tonight we are having chilit, it is already in the crock pot.

When we do grill outside I always add veggies so we have almost no pots and pans to clean up. That is what we did last night: steak on the grill with mushrooms, squash, and corn. I made a little cuke, tomato and feta cheese salad.

Even in the heat the grill can be a life savor cause most things don't take more than about 10 minute to grill. At least we don't take more than that.

Other than hamburgers or something along that line, we don't usually have sandwhiches. They are not quite satisfying for hubby, soup or chili is....

Of course as much fresh fruit as we can possibly eat helps a lot and yes, the wonderful cooling affect of a ice cream cone an hour or so after dinner. The wine comes before dinner (beer for hubby this time of the year) and the ice cream after.

Last night I had a bowl of cereal and then I nuked a bowl of fresh baby spinach enough to wilt it. It was actually very yum!

That's what I had, too. Though I had about a half cup of soup, the salad and followed up with a peach.

I don't eat a lot at one time, so Caprese is perfect for a meal for me.

Tonight we did Italian sausage, hot and mild grilled outside. I fried peppers, onions, garlic, potatoes inside--perfect sandwiches for dinner.
