If I have to use appliances, I use small tabletop ones that do not heat up the whole kitchen (pannini press, toaster oven, rice cooker, steamer, etc.).

This week (upwards of 100 every day), it's been mostly cold dishes and eating out.

I multi-purpose a whole roasted chicken from the grocery. I'll typically make either Chicken salad sandwiches or chicken tacos.

Ceviche. Easy to make and delicious! It's basically cubed raw fish, "cooked" using the acids from lemon and lime. Add some sliced green onions, lemon zest, chopped melons, salt, pepper and cilantro. Eat it straight or put it on some good crackers for a more filling meal. Delicious!

Two options:

1. Fire up grill, sit in shade, open super-cold beer, grill to heart's content (or malcontent), serve with a cold green salad or slaw of some kind
2. Go to restaurant with margaritas and air conditioning

Watermelon, cantelope, honeydew, peaches, apricots, plums, grapes, cherries, watermelon, ambrosia salad, tossed green Greek type salad, seafood salad, mac salad, potato salad, (requires boiling water and cooking pasta), watermelon, tuna salad, Sushi, boiled shrimp cocktail, boiled crawdads, hoagie sandwich, watermelon, BBQ brisket and make sandwiches, smoked fish and crackers with a good beer, Sushi, watermelon, bagel w/lox, cream cheese, tomato, capers, watermelon, Sushi.........
