I always have canned tuna. It's just so emergency friendly. It can be dressed up or down depending on what you like. A bit of chopped apple tastes refreshing. When my son was very young he loved chopped up Spam (yep - an emergency food if ever there was one) cut in cubes and browned, toss in a packet of dry chicken noodle soup and some rice, brown that until the noodles and rice are golden, pour on water let it simmer until rice is tender. Usually this was made when the snow and winds were blowing not the heat but today it will be 105 here and looks like it will be thin sliced ham sandwiches and chips- I'm not cooking. If you're nice I'll let you eat the last of the ice cream out of the carton. I'm not doing dishes either.

I always have a couple of cans of minced clams & clam juice on hand. 1 lb of thin spaghetti, freshly grated Italian parm. cheese, & a salad. Dinner done in 15 mins. & our kids always loved it.
