Default Simple, easy, nutritious summer meal

When it's summertime, who wants to spend time and heat up the kitchen cooking.


Avocado on buttered toast.


Take a ripe avocado, cut it in half and scoop out the good stuff with a spoon.

Mash/mix it with a fork and a little salt.

[Hint, if it doesn't mash easily with a fork, it's not ripe.]


Toast bread slices and spread on real butter [not that man-made fake stuff.]

Spread the avocado mix on the buttered toast and enjoy... yummm

I love avocados. Sometimes cubed avo with a bit of something drizzled is lunch. Also, cottage cheese, cold chicken, fruit. Cold food is the ticket in the summer.

I love avocados with Mrs. Dash lemon pepper but no butter - avocados already taste so buttery - add sliced garden tomoatoes on toasted bread...well, maybe a couple slices of microwave bacon...heaven.

I got both of these ideas from this forum.

BLT with avocado and avocado sprinkled with lemon pepper are both really good. Avocado and eggs are great for breakfast.

I just mash some ripe avocados and stir in a little hot sauce, or sprinkle on some crushed chipotle peppers.

Eat it with a spoon. A one-dish meal with little clean up for a hot summer day.

I make a super easy guacamole by using chunky salsa mixed with mashed avocado. The salsa already has the onions, tomatoes, peppers and seasonings.

Being raised in So Ca and having an avocado tree in our back yard, this was a staple for us, but we had it for breakfast or lunch. I don't think hubby would be too easy to live with if his dinner consisted of nothing more than avocado toast? If I added a little bacon and gave him fruit and chips on the side I think he might be alright.
