My m-i-l gave me what she said was a roast beef sandwich once. It was DELICIOUS! THEN she told me it was tongue. I finished it, it tasted fantastic, and was the tenderest meat I'd ever had.
I have lived my entire life in Wisconsin, about an hour and a half from the Illinois state line, and have NEVER heard of burgoo.

Illinois has had burgoo festivals for as long as I've lived and that's a very long time. I think it's time you learned about burgoo mrs.cool and especially since you lived so long close to burgoo heaven. Here's a list of some of the more popular burgoos. Since you don't live far from the Illinois line, you could make it a weekend trip and and travel a bit downstate. Utica has one coming up on October 7. Utica is known for Starved Rock State Park which has beautiful scenery and nature trails and camping facilities. Happy burgoo trails to you.

And we also have free carp fish give-aways at local communities all over the state. And now some people in this state are even eating those fish jumpers called the Asian Carp. In Central Illinois, in the teensy tiny town of Bath, they have the Rednecked Asian Carp fishing tournament. It's a blast to watch as those Asian Carp jump in the boat faster than you can blink an eye. And if you think I'm kidding, bring your boat and try it....you might win the tournament for the most jumpers. And I could probably give you some recipes on how to cook carp.

We went to a Chinese Buffet, there was this odd looking dish, semi solid round, clylindrical substances, with a gelatinous exterior, in gravy. We called it "Ba In Sa"...and decided not to partake of this particular dish. I am thinking, maybe pig testicles? Not sure.
If you can't figure out what it is by looking at it, I suggest not eating it.
