cube steak is usually what you have when you want to do something like a chicken fried steak or a dish that requires the meat to be very tender: swiss steak is usually fixed with round steak (sometimes pounded) and is cooked for several hours.

Meals I would say we have on a regular basis; maybe once a month or more:

Beef:

grilled steak
roast,usually tri tip or rump
in the winter; pot roast

Chicken;

grilled chicken breasts
chicken cassarole (I have several I like to use)
curried chicken and rice

Pork:

chops or steak
braised pork shoulder
pulled pork sandwhiches
stuffed pork loin

Fish:

SAlmon
Talapia
trout
Tuna cassarole

add to this, I make homemade soup a couple of times a month, more in the winter. We try to go meatless once a week, eating corn chowder, veggie enchaladas or mac and cheese.

We also have ethnic food at least once a week. It might be Italian, Asian or Mexican and could be made with any of the meats above. Usually I use left overs when making ethnic meals.

In the last couple of years, I've made a conscious effort to eat less processed foods, and more fresh produce. Since April, I've also made the effort to lose weight - not by some crash diet, just by counting calories and eating healthier. (It's working - I've lost 47.5 lbs.) These are now our most frequent dinners. You don't have to eat boring food to lose weight!

Beef:

Tacos al carbon (skirt steak marinated in lime juice, jalapeno, garlic, cilantro, cumin, salt and pepper pureed together)
Eye of round roast
Grilled steak
Sloppy joes (with homemade sauce, not Manwich)

Chicken (boneless/skinless breast meat)

Sauteed with white wine, garlic, and tomatoes. I sometimes add yellow squash. My husband likes it over pasta, I add spinach to mine (he doesn't like it) instead. This is my most frequent dinner in the summer, when fresh tomatoes are available.
Lemon pepper chicken
Panang curry chicken
Cashew chicken

Pork:

Souvlaka with tzatziki sauce
Pork fried rice
Roasted pork tenderloin

Seafood:

Salmon with creamy lime sauce
Rainbow trout with lemon pepper
Fish tacos (usually with tilapia)
Shrimp po'boys with spicy slaw

Cube steak is pieces of round steak (which is a tougher cut of meat) which have been run through a tenderizer, so they can be quickly browned on both sides like a steak and will be tender. I like cube steak a lot. It's very flavorful, inexpensive and easy to fix.
Swiss steak is round steak which has been slow cooked in a tomato/beef broth based sauce for a few hours until tender.
