Tonight we have ...,,Beef Medallions ''...

Beef medallions topped with grilled Portobello mushrooms in a black pepper shallot sauce served with grilled vegetables.With it a glass of wine.


For dessert ...Bacio Bianco ...White chocolate ice cream ball.


On second thought , I totally forgot it is Ash Wednesday ...so no meat tonight, instead we will have a delicious traditional Pasta with green salad or a Vegetarian Pizza!

Linguini with garlic, olive oil and a mixture of carrots, broccoli and cauliflower tossed in. There are 2 pieces of chicken picatta left so hubby will have that as well.

It is Ash Wed. so no meat here, shrimp scampi over spaghetti, Italian bread & salad.

Just like Kelsie, Ash Wed means no meat which certainly will not hurt us. I am making vegetarian enchaladas, which we love and I don't do often enough and a nice green salad. Now, if I can just stick with my lent sacrafice to give up wine for 40 days it will be fine. I have my doubts if it will work. I wonder what else I could give up that I could stick with?

- Pot Roast in the slow cooker. Used a lemon juice/balsamic vinegar combination for the liquid and spiced it with steak spice, garlic, and onion
- Carrots and potatoes

My gf is coming over for a girls night so I'm making whole wheat pasta with tasty sauce and a slice of garlic toast as a small cheat.

No meat today for me. Grilled cheese sandwich and lemon bars and chocolate chip oatmeal cookies for dessert.

I decided to go with Brocolli (per son's request) also the Asperagus at the store today did not look fresh
The center is Tuna grilled on Garlic Mashed Potato, garnish is shaved corn and avocado completed with fresh melon
