never had a problem with deli ham ever unless it's left in the fridge too long and I forget about it then it gets slimy. Cold cuts don't last long in my house because I eat them at least 3 times a week and I only but 1/2 lb of ham, turkey and cheese.

Slimy ham = old ham, or slimy ham = cheap ham, or slimy ham = old cheap ham.

Slimy ham does not equal undercooked ham.

Ding, winner. I believe ham takes on water well without too much altering of the taste, so it is one of the more abused water added meats.

I have that problem with deli turkey - too often it has pink areas in the slices. Poultry should not be pink, imo.

Pink areas are due to two things - one is that deli meats are cooked at a low temp for a long time, so are thoroughly cooked, but pinkish and tender (as are all meats cooked low and long). The other thing is the preservatives like nitrates, which maintain the freshly baked look.

I stopped buying deli ham and started buying the pre-packaged stuff..The kids eat it so fast that it doesn't have time to get slimy :/

OP, it sounds like you are buying boiled ham or another cheap version. Or are leaving it in the fridge more than a day or two.

Has nothing to do with being undercooked.

Slimy ham means old ham that is ready for the garbage. Has nothing to do with how long it's been baked.

Been going to the same butcher shop for 28 yrs and this has never happen....has never been an issue.

Yes be careful slimy ham is not undercooked ham but ham that is spoiled or spoiling. You should not eat it. If you notice ham that is kept too long begins to get slimy.
