stove top stuffing instead of potatoes LOL. Rice, risotto, stewed zucchini in sauce, stuffed mushrooms, mac and cheese.

I just had this with steamed Kabocha squash. It was delicious. It is a Japanese pumpkin and you can mash it up like potato if you choose.

With meatloaf, we usually have fresh green beans and steamed carrots. If yellow squash is in season, I really like that.

So many great ideas! I'm excited to try them with meatloaf and other dishes! (I went to the grocery store before I read the responses. )

I'm having baked potatoes and fresh green beens. BUT I'm also making cheddar broccoli soup.

Cheddar broccoli soup inspired me to have the baked potatoes. I'll bake extra potatoes so I can try baked potato soup tomorrow!

Scalloped corn and perhaps Parsnips halved and parboiled then fried in butter until golden brown.

Or now that it's fall, perhaps turnips cooked with a bit of bacon.

Or if you want a heavier type side dish, make some dumplings (either rolled or dropped) and use chicken broth to cook them in.

Risotta with herbs and/or mushrooms with just a bit of parmesan cheese.

Macaroni salad
Pasta salad
Cabbage or cabbage & noodles
Baked beans
Deviled eggs
Spinach salad with craisins, nuts & a vinaigrette
Wilted spinach salad w/bacon & mushrooms
Baked acorn squash (any fall squash would work)
Baked sweet potatoes (to me they are very different from regular potatoes)
Any of the frozen veggie blends, we like the Normandy or Cali blends a lot
Steamed baby carrots
Creamy cukes
Cucumber & tomato salad
Zucchini halves (oven roasted w/just a touch of olive or coconut oil, then sprinkled with fresh parm & your fave seasonings after flipping)
Scalloped tomatoes (I like Ina's recipe)
Tomato halves broiled with cheese
Pineapple salad

Hehe I often like sides more than the main dish and skip what the others are eating altogether. Sometimes the rest of the family does the same. These are but a few, I have tons, but hopefully something here or in the other responses will give you a few ideas. Enjoy. Meatloaf and the sandwiches it makes is one of life's great pleasures.

I'd just make some rice or egg noodles w/maybe some gravy if available or not. Maybe some corn, green beans or peas. That's how I would do it.
