I'll make a couple of Thai dishes if I know the people like Thai. I make a fantastic Green curry. Better than I have had anywhere!!! LOL, {Pats own back} I serve that with Jasmine rice. I will also make a Thai noodle dish like pad Thai so there is some variety. Usually I'll have some kind of appie like shrimp rolls or calamari.

You're having people over for a meal and you want to impress them. But you also don't want to screw up the food; now is not the time to test out a new recipe. So what is your go-to dish? What is the one dish that you can knock out of the park each and every time? Or is your go-to dish something you order in from a local restaurant?
Personally, I just panic. I wonder if it is okay to pretend to have the flu. Or run away from home. No restaurants near me for take-out. I figure something out eventually. I've never had a disaster. But I panic every time.

Sounds like a dinner party at netwit's is going to involve dry pasta and a jar of Ragu.
Now that I think about it, I usually have people over for dinner during warmer months when days are longer and I can grill outside. My go to dishes are chicken kabobs and turkey burgers on the grill and potato salad for a side.
I will fire up the smoker and do pork (pulled pork sandwiches) or brisket, I will serve the dish with potato salad, baked beans, slaw or something different if requested and a couple of good/chilled bottles of red wine . The guests know that if your coming over to my house this is the standard fare.
Baked Chicken and Rice Dressing with a Salad. This can get pulled together in about 60 minutes.

She's actually an EXCELLENT cook -- you should see some of the stuff that she makes for dinner; take a look at the "What's for dinner?" (or whatever it's called) thread. She just doesn't give herself enough credit.
Ditto. With chicken either roasted from the grocery store or baked with this crunchy Greek yogurt coating. And asparagus.
