In Vegas, I always hit the salad bar..all those fresh veggies and prepared salads..last time I was there, I had fresh tabouli, that was too die for. With warm pita bread. Vegas is now catering to more Middle Eastern crowd, and the buffet menus reflects that..rich stews flavored with cinnamon, tumeric, and lemon. More vegetarian offerings. I had a cold lentil salad that was lightly spiced with curry and sprinkled with feta cheese and had olives in it....Yum.

Salt and pepper shrimp, especially if tehy are head-on/
Any well prepared, fresh looking Indian dish
Lamb kabobs or lamb chops

If it is a commercial type buffet, I like the salad bar. I can't afford to put 150 different items out for salad at home, so I take advantage.

If it is a potluck type of buffet, I've got my eye on the desserts.

Fresh pineapple, veggies, and sometimes a potato or pasta dish, if it doesn't look unidentifiable or all dried up.

Ironically, when I go to a buffet I usually load up on vegetables. I rarely eat them at home so I feel like it is a treat when I can get a large variety of different ones. I usually eat a big salad too (if there is iceberg), then I head for the mashed potatoes, green beans (if they are cooked with bacon), limas, black-eyed peas, pinto beans, baked beans, great northern beans (yes, yes, I love my beans! LOL) and usually some corn, sweet potatoes and anything else that looks good. If there is talapia, and it's well cooked, I will have some of that, otherwise, catfish!

I cannot resist: Strawberries, cheese samplers, shrimp, buffalo wings, artichoke dip, miniature quiches, fresh veggies, cheesecakes, & those fruit tarts with kiwi on top.
